Wanting to get into sampling and making beats.

I’m not really musically inclined or talented, but I enjoy music a lot and have a pretty diverse taste in it, and I’ve always found sampling and making beats really interesting because it seems like something that would be easier for me to get into. One of my biggest questions is just how to get started.

Also how do people organize samples?

Like take someone like Madlib, The Alchemist, Kanye West.
Do they sample stuff when they first hear it and then store it in a hard drive somewhere or do they write it down with a time stamp or do they just make a mental note. I can’t imagine it’s easy keeping track of sampling.
